Want to entertain the kids this long weekend and make something yummy to fill their pukus, why not try our Anzac Biscuit recipe using our delicious Kids Floral Honey. Our Kids Floral Honey gives the biscuits that sweet taste, but doesn’t give them the sugar high, so you can all still enjoy your long weekend.
INGREDIENTS
1 cup plain flour
1 1/2 teaspoons ground cinnamon
1 cup rolled oats
3/4 cup dessicated coconut
125 grams unsalted butter
1/4 cup Kids Floral Honey
pinch sea salt
1/2 teaspoon baking of soda
2 tablespoons boiling water
METHOD
Preheat oven to 160ºC. Line baking trays with baking paper.
Place dry ingredients in a large bowl and stir to combine.
In a small saucepan over low heat, melt the butter and honey, stirring until the mixture starts to bubble. Add a pinch of salt.
Mix baking soda with boiling water and add to butter mixture.
Pour melted butter mixture into dry ingredients and mix well.
Roll 1 teaspoon of mixture into a ball and place on a tray. Repeat with remaining mixture, allowing room for mixture to spread.
Bake for around 15 minutes if you like them chewy, or 20 minutes if you like them crunchy.
Allow biscuits to cool on trays before transferring to a wire rack. Store in an airtight container.
For an extra special treat - drizzle Anzac biscuits with some melted dark chocolate.
